1/2 teaspoon dried thyme
pitted colada olives
fire roasted red peppers
2 tablespoons capers
crumbled goat cheese (optional)
2 1/2 cups dry pasta

Cook off pasta, then drain and cool it down, no need for pasta water.

Slice cucumbers into fairly big dices, about 1 cup.

Chop spring onions, using both white and green parts, about 1 cup.

Drain 2 cans of tuna (in water) and set aside.

Prepare capers and pitted colada olives.

Use fire roasted red peppers from a jar, or roast your own if preferred.

Squeeze about 5 oz of fresh lemon juice and zest 2 tablespoons of lemon.

In a jar, combine 5 oz olive oil, 5 oz lemon juice, lemon zest, white pepper, thyme, and pureed garlic. Shake well to mix.

Layer cooled pasta in a mixing bowl, seasoning it well with salt during cooking.

Add chopped fire roasted red peppers to the pasta, including some liquid for flavor.

Add the drained tuna to the bowl, keeping it chunky.
