Coconut oil adds flavor and is dairy-free.

In a mixing bowl, combine together the beaten egg, mashed banana, butter milk and cooking oil.

Add in the sugar, salt, baking soda, baking powder and flour.

Using a spatula to stir all ingredients until combined, but don't over mix.

In a pan on medium heat, using a tablespoon scoop in the batter.

In about 1 minute you should see some bubbles appear. Flip the pancakes over and fry for another minute. Repeat this step with the remaining batter.

Transfer the pancakes into a plate.

Garnish the pancakes with icing sugar.

Serve the banana pancakes with maple syrup. Enjoy!
