Apple Cinnamon Baked Oatmeal

1 ½ cups quick-cooking oats
¼ cup almond meal
1 tsp baking powder
½ tsp sea salt
1 ½ tsp ground cinnamon
pinch ground nutmeg
pinch ground cloves
1 cup unsweetened applesauce
1 large egg (lightly beaten) or 1 TBS ground flaxseed/chia seeds with 2 ½ TBS warm water (for vegan)
¼ cup maple syrup (or honey)
1 cup unsweetened vanilla almond milk
1 tsp pure vanilla extract
1 large apple (finely chopped, about 1 ½ cups)

Preheat oven to 350 degrees F.

Grease a 9x9” baking pan, set aside.

Add chopped apples to a small, microwave safe bowl. Microwave for 2 minutes. Set aside to cool.

In a small bowl mix together oats, almond meal, baking powder, salt, cinnamon and cloves and nutmeg, set aside.

In a large bowl, beat eggs.

Add applesauce and mix until combined.

Add almond milk, vanilla and maple syrup. Stir until combined.

Add dry ingredients to the wet mixture and stir until combined.

Add cooked apples and mix thoroughly.

Bake in preheated oven for 35-45 minutes or until the top is set and edges are slightly brown.

Serve warm or cold!

Store it in an airtight container in the refrigerator and reheat in the microwave.
