1 tbsp ground masala
2 tbsp paprika
2 tbsp ground ginger and garlic paste
1 can tomato paste
2-3 tbsp shawarma spice
2-3 tbsp salt
2 tbsp paprika
2 tbsp chili powder
2 handfuls garlic
1.5 cups avocado oil
1/2 lemon
3 cans chickpeas
1/2 cup tahini
1/2 cup extra virgin olive oil
3 bunches parsley
5 mint leaves
1/2 cup bulgur
4 tbsp extra virgin olive oil
1/2 lime
cucumbers

sweet sauce (condensed milk and evaporated milk)

Melt 3/4 cup ghee in a pot.

Add 8 Long Horn chilies, 5 dry lemons, 2 black cardamom pods, 8 green cardamom pods, 3 cinnamon sticks, and 10 cloves to the ghee and toast until fragrant.

Add 50 medium red onions and caramelize until brown.

Stir in 12 chopped tomatoes, 1 tbsp salt, 1 tbsp ground coriander, 1 tbsp cumin, 2 tbsp paprika, 1 tbsp ground masala, and 1 tsp turmeric, and sauté for 10 minutes.

Add 8 cups of soaked Basmati rice and 1 liter of chicken stock, bring to a boil, then reduce heat and simmer for 25 minutes.

Marinate 15 pieces of quarter chicken with 2 tbsp salt, 4 tsp ghee, 1 tbsp ground coriander, 1 tbsp cumin, 1 tbsp ground turmeric, 1 tbsp ground masala, 2 tbsp paprika, 2 tbsp ground ginger and garlic paste, and 1 can of tomato paste for at least 5 hours.

Preheat oven to 475°F and place the marinated quarter chicken in the oven.

Prepare the shawarma by mixing 4 tbsp ghee, 2-3 tbsp shawarma spice, 2-3 tbsp salt, 2 tbsp paprika, and 2 tbsp chili powder with the chicken.

Blend 2 handfuls of garlic with 1.5 cups of avocado oil and 1/2 lemon, seasoning with salt to make garlic sauce.

Blend 3 cans of chickpeas with 1/2 cup tahini, 1/2 cup extra virgin olive oil, and 1/2 lemon to make hummus.

Prepare tabbouleh salad by blending 3 bunches of parsley, 5 mint leaves, 1/2 cup bulgur, 4 tbsp extra virgin olive oil, 1/2 lime, and cucumbers.

Assemble the chicken shawarma with garlic sauce, pickles, French fries, and pomegranate molasses.
