Salmon sashimi is a celebrated dish in Japanese cuisine, often enjoyed for its fresh, delicate flavor and beautiful presentation. Traditionally served as part of a larger meal, it highlights the quality of the fish and the skill of the chef. Today, salmon sashimi is popular worldwide, often found in sushi restaurants and enjoyed for its health benefits and exquisite taste.

Sardines are rich in omega-3s and cheaper than salmon.
Get a nice piece of salmon with the grain going right across.
Make the brine with 500ml of water, 6% salt, and 4% sugar, and let it dissolve.
Add the salmon to the brine and leave it in the fridge for 24 hours.
After 24 hours, pat the salmon dry.
Place the salmon inside a sous vide bag and add 40g of extra virgin olive oil.
Seal the sous vide bag using a vacuum sealer.
Set the sous vide machine to 41°C and add the salmon.
Cook the salmon for 25-27 minutes depending on thickness.
After cooking, let the salmon rest for 1-2 minutes.
Use a butter knife to separate the salmon into flakes by sliding it between the fat layers.
Prepare avocado slices and arrange them on a plate.
Add the salmon flakes to the plate with the avocado.
Finish the dish with some herbs for decoration.
