1 can chickpeas, drained and rinsed (about 2 cups)
2 Medium broccoli heads, cut into florets
1/2 Cauliflower head, cut into florets
1 Large red onion, peeled and sliced
2-3 Medium carrots, peeled and diced
1 Tbs zaatar spice mix
1 Tbs Garlic, chopped
2 Tbs Olive oil
1 Tbs Lemon juice, optional
Parsley to finish and garnish
Salt and pepper
1 Cucumber, washed, deseeded and sliced
2 Vine ripe tomatoes
1/2 Red onion, peeled thinly sliced
1 Tsp Olive oil
1 Tsp Lemon juice and zest
Salt and pepper to taste
1/2 cup plain/Greek yogurt
1 Tsp lemon juice and zest
1 Tsp Olive oil
1/2 Tsp honey, optional
1 Tbs Parsley

Preheat the oven and prepare a baking sheet.

In a large bowl, combine chickpeas, broccoli, cauliflower, red onion, carrots, zaatar spice mix, garlic, olive oil, lemon juice, salt, and pepper. Toss to coat the vegetables evenly.

Spread the vegetable mixture onto the prepared baking sheet in a single layer.

Roast in the oven until the vegetables are tender and slightly caramelized.

While the vegetables are roasting, prepare the side salad by combining cucumber, tomatoes, red onion, olive oil, lemon juice, lemon zest, salt, and pepper in a bowl. Toss to combine.

For the yogurt sauce, mix together yogurt, lemon juice, lemon zest, olive oil, honey (if using), parsley, salt, and pepper in a separate bowl.
