Quando volete realizzare la ricetta del brasato per prima cosa fate un trito di sedano, cipolla e carote.

In una casseruola, sciogliete il burro e un giro di olio aggiungete la carne e rosolatela, rigirandola più volte affinché si possa sigillare uniformemente. Salate e pepate.

A questo punto dovrete versare il vino rosso bollente, fino a coprire quasi completamente la carne, aggiungete le verdure a pezzettoni, i chiodi di garofano, l’alloro incoperchiate e lasciate cuocere, adagio, per 4-5 ore girate il pezzo dopo un paio di ore.
