Cut the french bread into bite-size pieces, about 1 inch.
Use 12 to 15 slices of french bread, or a whole loaf if needed.
In a mixing bowl, beat 12 eggs until there are no big chunks.
Add 2 cups of milk to the eggs, which can be whole or 2%.
Mix in 1/3 cup of maple syrup, 1 teaspoon of vanilla extract, 2 teaspoons of cinnamon, and a dash of nutmeg.
Whisk the mixture together until combined.
Pour the egg mixture over the french bread, trying to cover as much as possible.
Use a fork to mash down or stir the bread to help it soak up the egg mixture.
Cover the dish with Saran wrap and refrigerate for at least 4 hours, or up to 48 hours.
Before baking, ensure the dish comes to room temperature to avoid breaking.
To make the strudel topping, mix 6 tablespoons of room temperature butter with 1/3 cup of brown sugar, 1/3 cup of flour, and 1/2 teaspoon of cinnamon.
Use a fork to combine the topping ingredients until crumbly.
After the bread has soaked, remove it from the fridge and sprinkle the strudel topping over it.
Preheat the oven to 350°F (175°C).
Bake the french toast bake for 45 to 50 minutes until the top is lightly golden brown.
Let it cool slightly before serving.
Serve with fresh maple syrup, buttermilk syrup, or fresh berries.
