Wash the terrar (amaranth leaves) in running water, removing the leaves from the stems until all leaves are separated.

Chop the terrar into smaller pieces using a sharp knife and chopping board.

Chop the onions, garlic, and ginger, preparing them for cooking.

In a medium-high flame, heat 2 tablespoons of cooking oil in a pot.

Add 1 teaspoon of salt to the oil and then add the chopped onions to the pot, sautéing for 30 seconds to 1 minute.

Grate the ginger and chop the tomatoes while the onions are cooking, ensuring not to burn the onions.

Once the onions are golden brown, add the grated ginger and chopped garlic to the pot, stirring for about 1 minute.
