Traditionally, it is prepared simply with onions and tomatoes, highlighting its earthy flavor. In many households, it is a go-to dish for quick meals, reflecting the importance of greens in local diets. Chop the terere leaves as preferred, either leaving them whole or chopping them into smaller pieces.
Blend ginger and garlic together.
In a pot, add vegetable oil and heat it up.
Add chopped onion to the pot and sauté until translucent.
Add the blended ginger and garlic mixture to the pot.
Add diced tomatoes to the pot.
Add a Magic Cube for seasoning.
Add the terere leaves directly into the pot without water.
Cover the pot and let it cook, stirring occasionally.
Add tomato paste to the mixture and stir well.
Cover the pot again and let it cook until the terere leaves are tender.
