In a large pan, melt 100 grams of butter until partially melted, then add 1 tea glass of vegetable oil (125 ml).

Set the heat to medium and continuously stir the semolina for about 10 minutes until it changes color.
After 10 minutes, add 1 tablespoon of flour to the semolina and continue to stir and cook.
Test the mixture by placing some on a plate and adding a drop of water to check the color.
Reduce the heat to low and add 2 cups of sugar, stirring until the sugar is slightly mixed with the semolina without fully melting it.
Add 2.5 cups of cold water to the pan and then add the chopped walnuts.
Increase the heat to medium and cook while stirring until the mixture absorbs all the water.
Once the water is absorbed, turn off the heat and cover the pan for 3-4 minutes to let it rest.
After 4 minutes, uncover the pan and fluff the helva with a spatula.
Transfer the helva to a serving plate, pressing it down with a spatula for a smooth top.
Invert the plate to release the helva from the mold, adjusting the edges with a spoon for presentation.
Make decorative patterns on the helva with a spoon and sprinkle some crushed pistachios and walnut pieces on top.
