Gently crack 1 egg into the jar that came with your stick blender or a similarly sized mason jar.
Add 1 tablespoon lemon juice, 1 tablespoon vinegar, 1 teaspoon mustard, and 1/2 teaspoon salt to the jar.
Add 1 cup avocado oil or olive oil last and let the ingredients settle for a minute or two.
Keep the stick blender firmly on the bottom of the jar for at least 10 to 15 seconds while blending.
Once the mayonnaise has thickened and reached the top, move the blender up and down to fully combine all ingredients.
Scoop the mayonnaise into a storage container and give it another good stir before placing it in the refrigerator.
