Soak 1.5 cups of basmati rice for 2 hours and rinse until water runs clear.
Boil water and season it with salt, then cook the rice for 5 minutes.
In a bowl, combine 3/4 cup of Greek yogurt, 1 egg yolk, and a pinch of saffron to bloom the saffron.
Add 2 tablespoons of freshly squeezed orange juice to the mixture.
Melt 6 tablespoons of butter and use some to grease the casserole dish.
Zest one of the oranges and add it to the mixture.
Mix in 3 tablespoons of honey into the rice mixture.
Layer half of the rice mixture into the greased casserole dish.
Add slices of the second orange on top of the rice layer.
Top with the remaining rice mixture and press down evenly.
Pour some melted butter over the top.
Bake in the oven at 375°F for about 1 hour.
Chop pistachios, almonds, dates, and golden raisins for the topping.
Melt the remaining butter to mix with the chopped nuts and fruits before serving.
