Sift 2.5 cups of all-purpose flour into a bowl.
Add 1 tablespoon of sugar and a pinch of salt to the flour.
Add 0.5 teaspoon of baking powder and 1 teaspoon of baking soda to the mixture.
Grate 150 grams of cold butter into the flour mixture.
Mix until the mixture resembles coarse cornmeal.
In another bowl, combine 1 cup of full fat Greek yogurt and 1 teaspoon of vanilla extract.
Mix the wet ingredients into the dry ingredients until a soft dough forms.
Knead the dough on a surface until it is smooth and not sticky.
Cut the dough in half and shape each half into a rectangle.
Wrap the dough in plastic and refrigerate for 30 minutes.
Toast 0.5 cup of walnuts in a skillet until lightly browned.
Sift 1 cup of flour into the same skillet and toast until lightly golden.
Combine toasted walnuts, 1 cup of sugar, 120 grams of soft butter, 0.5 teaspoon of cinnamon, and 1 teaspoon of vanilla in a bowl to make the filling.
