Start by preparing the dry ingredients: measure 3.5 cups of oats into a bowl.

Add 2 teaspoons of baking powder to the oats.

Measure and add 2 teaspoons of pumpkin pie spice (or substitute with cinnamon).

Add 0.5 teaspoons of salt to the mixture.

Add 2 tablespoons of shredded coconut (optional).

Add 4 teaspoons of chia seeds to the dry ingredients.

Mix all the dry ingredients together thoroughly.

Prepare the baking pan by greasing it with coconut oil, spreading it evenly at the bottom.

In a separate bowl, combine the wet ingredients: pour in 1.33 cups of maple syrup.

Add 2 cups of almond milk to the wet mixture.

If the almond milk is under 2 cups, add water to adjust the consistency as needed.

Combine the wet ingredients with the dry ingredients in the pan, mixing them together thoroughly.
