Welcome to Apple month, today we are making a single serve apple galette.
Start by making the pie crust: in a bowl, combine 1/4 cup plus 1 tablespoon of all-purpose flour, a pinch of salt, and 1 teaspoon of sugar.
Add 2 tablespoons of cold unsalted butter, diced into small pieces, and mix until it resembles coarse sand using a pastry blender.
Add 2 teaspoons of cold water (adjust as needed) and mix until the dough comes together, being careful not to make it too wet.
If the dough is too soft, chill it for 10-15 minutes, but if it's okay, roll it out immediately.
Prepare a small baking sheet with two pieces of parchment paper, place the dough between them, and roll it out to about an eighth of an inch thick, rotating as you roll to maintain a circular shape.
Transfer the rolled dough to the baking sheet, loosening the edges if necessary.
In a bowl, mix 1 to 2 tablespoons of sugar (depending on sweetness preference), 1/2 teaspoon of cornstarch, 1/4 teaspoon of cinnamon, and a pinch of nutmeg.
Peel, core, and slice the granny smith apple, then pile the slices in the center of the dough, leaving a 1 to 1.5 inch border.
Sprinkle the sugar mixture over the apples and place about 1/2 tablespoon of softened butter in small pieces on top of the apples.
Fold the edges of the dough up over the apples, creating tucks or pleats, ensuring there are no holes for juices to escape.
Optionally, brush the crust with an egg wash or cream and sprinkle with sugar for a golden finish, but this is purely aesthetic.
Bake in a preheated oven at 400°F for 20 minutes or until the apples are cooked through and bubbly, and the crust is golden brown.
Remove from the oven, let it cool slightly, and serve on a plate with vanilla ice cream and caramel sauce.
