Put 2 sugars into a pan over medium heat.
Add unsalted butter on top of the sugars in the pan.
Peel, core, and slice 6 apples using a stable knife.
Prepare a broken caramel by heating the apples with the sugar and butter.
Season the mixture with pie spice as it cooks.
Roll out the pastry dough on a floured cutting board, ensuring uniform thickness.
Transfer the rolled dough to a baking sheet.
Pour the apple mixture into the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the apples, creating a rustic look.
Mix cream and egg yolk together and brush it on the edges of the dough for shine.
Bake in a preheated oven at 400°F (200°C) for 25-30 minutes until the crust is brown and crisp.
Let the galette cool before slicing.
