Start by making the apple galette and slice the apples.
Peel and core the apples, removing as much peel as possible and any seeds.
Use a stable slicing knife to slice the apples uniformly.
In a pan over medium heat, add the two sugars and butter to make a broken caramel.
Once the caramel is boiling with the apple juices, add the pie spice.
Flour the cutting board and roll out the pastry dough to a thin, uniform thickness.
Place the sliced apples in the middle of the rolled-out pastry in a mound and spread evenly, leaving a 2-inch border.
Fold the edges of the pastry up over the apples to create a rustic edge.
Mix equal parts cream and egg yolk and brush it on the edges of the pastry for shine.
Bake in a 400°F oven for 25-30 minutes until the crust is brown and crisp.
Let the galette cool, slice, and serve with whipped cream and creme fraiche.
