Make the pie dough from scratch or use store-bought.
In a food processor, combine 1 and 1/2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 1/2 teaspoon of salt. Pulse to combine.
Cut 1/2 cup of cold unsalted butter into cubes and add to the food processor. Pulse a few times to break it down.
Add 4 tablespoons of ice water while pulsing until the dough holds together. Test by squeezing a bit in your hand.
Transfer the dough to a work surface, knead it a couple of times to combine, and shape it into a disc.
Wrap the disc in plastic wrap and chill in the fridge for 2 hours.
Once chilled, preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
Peel and slice 3 apples into eighth-inch slices, transferring them to a bowl as you work.
Add 1 tablespoon of lemon juice, 1/4 cup of granulated sugar, and 1/2 teaspoon of cinnamon to the apple slices and toss to coat.
Roll out the chilled pastry dough into a 12-inch circle on a floured surface, using a pastry mat for easier handling.
Transfer the rolled dough to the prepared baking sheet, ensuring it's assembled on parchment paper.
Place the apple filling in the center of the dough, leaving a 3-inch border around the edges.
Drizzle 2 tablespoons of butter over the apple filling.
Fold the edges of the dough over the apples, creating pleats as you go.
Brush the crust with a beaten egg and sprinkle with sanding sugar for a golden finish.
Bake in the preheated oven for 45 minutes until golden and the apples are tender.
Allow to cool slightly before slicing and serving.
