Transfer batter into a lined 12-cup muffin tin using an ice cream scoop, filling each cup about three-quarters full.
Bake in the oven at 375 degrees Fahrenheit for 20-25 minutes, checking for a golden top and a toothpick inserted in the center to come out clean.
Let muffins cool slightly before serving, optionally slathered in butter.
