In a bowl, combine 3 eggs, 1 cup flour, 1 tbsp yeast, 1 tsp salt, and 1 tbsp sugar.

Add 1 cup milk and 1/2 cup water to the mixture and stir until smooth.

Chop the yellow and green bell peppers, 1 tomato, 1 onion, and 2 spring onions, and add them to the batter.

Mix in chopped green coriander and black pepper to taste.

Heat oil in a frying pan and pour in the batter to form an omelette.

Cook until golden brown on both sides, then add cheese on top and let it melt before serving.
