3 large egg yolks
1 cup milk
1/2 cup heavy cream

Whisk together 1/4 cup sugar, 2 tablespoons cornstarch, 1 pinch salt, and 3 large egg yolks.

Add 1 cup of milk and 1/2 cup of heavy cream to the mixture.

Add 2 teaspoons of vanilla extract or a split vanilla bean with seeds scraped out.

Cook the mixture over medium heat, whisking constantly until it starts to bubble and thicken.

Take it off the heat, but keep stirring for one minute.

Strain the mixture through a fine mesh sieve to remove any scrambled egg bits.

Chill the custard if desired, or serve warm.
