Old Fashioned Baked Vanilla Custard

Today, variations abound, with many incorporating flavors like chocolate or fruit, but the classic vanilla version remains a beloved favorite.

Greek yogurt reduces calories while maintaining creaminess
Crack 2 large eggs into a mixing bowl.
Add a little white sugar and a spoon of brown sugar to the eggs.
Add a big pinch of salt and some vanilla extract to the mixture.
Whisk the mixture for about a minute until the sugar dissolves and feels smooth.
Add whole milk to the egg mixture and mix well.
Transfer the batter back into the measuring cup for easier pouring.
Use four 5 and 1/4 ounce ramekins and fill them about 3/4 of the way with the custard mixture.
Pour about an inch of water into a baking dish to help cook the custards evenly.
Place the ramekins in the water bath and transfer to a preheated oven at 325°F (163°C).
Bake for 45 to 65 minutes until the custards are set.
Grate nutmeg over the custards before baking if forgotten initially.
Check doneness with a knife; it should come out clean if the custard is set.
Let the custards cool on a rack to room temperature.
Transfer the cooled custards to the refrigerator until thoroughly chilled.
Garnish with raspberries and a dusting of powdered sugar before serving.
