In a medium bowl, whisk together the Greek yogurt, water, beaten egg, canola oil, and vanilla extract.
In a larger bowl, combine the Kodiak pancake mix with the Chia seeds.
Add the egg mixture to the dry ingredients and stir until just combined, being careful not to over mix.
Spray a heated waffle iron with non-stick cooking spray or brush with oil.
Scoop the batter onto the waffle iron and close to cook the waffles.
In a medium saucepan, add the maple syrup, creamy peanut butter, and salt.
Turn the stove onto medium-high heat and bring the mixture to a boil.
Turn the heat down and simmer for 5 minutes.
Remove from heat and stir in the vanilla extract.
Drizzle the peanut butter syrup over the waffles and add mini chocolate chips.
