Measure out 3/4 cup of all-purpose flour (90 g) and set aside.

In a medium pot, combine 1/4 cup of unsalted butter (56 g), 2/3 cup of water (160 ml), scant 2 teaspoons of granulated sugar, and 1/4 teaspoon of salt over medium-high heat.

Once the mixture comes to a boil, remove from heat and add the flour, stirring until it forms a ball of dough.

Return the pot to medium-low heat and stir for 1 to 2 minutes to cook the flour and reduce excess moisture.

Transfer the dough to a stand mixer fitted with a paddle attachment and mix on medium speed for about 3 minutes to cool it down.

Add 2 large eggs one at a time, mixing on medium speed until the dough is silky and glossy; also add 1/2 teaspoon of vanilla.

Prepare a piping bag with a large closed star tip and fill it with the churro dough.

Pipe churros about 4 inches long and 3/4 inch thick onto parchment paper, using scissors to cut them to size.

Freeze the piped churros for 30 minutes until firm; they can also be stored in the freezer for up to 2 weeks.

Preheat the air fryer to 375°F (190°C).

Place the frozen churros in the air fryer basket, spaced 1 inch apart, and cook for 8 minutes.

After 8 minutes, flip the churros over, reduce the temperature to 325°F (160°C), and cook for an additional 8 minutes or until golden brown and dry in the center.

In a bowl, mix 1/2 cup of granulated sugar with 1 1/2 teaspoons of cinnamon for coating.

Once the churros are done, spray them with neutral oil and toss them in the cinnamon sugar mixture until well coated.
