Chicken breast is leaner and often less expensive.
Rinse the New York steak briefly in water to wash off any debris.
Pat the steaks dry with paper towels to reduce splatter when pan-frying.
Trim off the tough edge and excess fat from the steak.
Tenderize the beef using the back of a knife to loosen the grain.
Score the fatty edge of the steak to prevent shrinking during cooking.
Season the steak with 1/2 tsp of salt on both sides.
Add 1/2 tsp of garlic salt on both sides and press it in.
Sprinkle 1/2 tsp of black pepper on both sides.
Brush 1 tbsp of oyster sauce on both sides of the steak.
Lightly coat both sides of the steak with 2 tbsp of cornstarch.
Cut 2 oz of yellow onion into strips along the grain.
Cut red onion into strips, removing the core for easier slicing.
Microwave green beans covered for 2-3 minutes.
Heat a pan on high heat and add 2 tsp of oil.
Sear the edges of the steak using tongs for about 1 minute.
Lay the steak flat in the pan and add a bit more oil.
Press down on the steak to ensure it cooks evenly.
After about 2 minutes, flip the steak to the other side.
After another minute and a half, flip the steak again.
