Chicken breast is leaner and often less expensive.
Take two cuts of strip loin steak, about 1 inch thick, and let them come to room temperature.
Add a little olive oil to the steak and rub it in.
Sprinkle fresh ground pepper on both sides of the steak and rub it in.
Add Kure salt to the steak, rubbing it in well on both sides.
Grab a heavy fry pan and add about 1/4 cup of oil, heating it until it smokes.
Once the oil is hot, add the first steak to the pan followed by the second steak, listening for the sizzle.
Let the steaks cook for about 3-4 minutes without moving them.
After 3 minutes, check the steaks and decide if they need another minute; let them go for a total of 4 minutes if needed.
Flip the steaks over and crisp up the edges by holding one steak to the side and cooking the other for about a minute.
To check doneness, use the finger method: touch your thumb and index finger for rare, middle finger for medium rare, ring finger for medium, and pinky for well done.
Remove the steaks from the pan when they reach your desired doneness; let them sit for 5 minutes before serving.
