3 cups rolled oats
1/2 cup sliced almonds
1 cup chopped pecans
1/4 cup chia seeds
1/4 cup dark brown sugar
2 tablespoons dark brown sugar
1/4 cup maple syrup
2 tablespoons maple syrup
1/4 cup light olive oil
3/4 teaspoon coarse kosher salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 cup raisins

Preheat the oven to 250 degrees.

Combine 3 cups rolled oats, 1/2 cup sliced almonds, 1 cup chopped pecans, and 1/4 cup chia seeds in a bowl.

Add 1/4 cup packed dark brown sugar and 2 tablespoons dark brown sugar to the dry ingredients and mix well.

In a separate bowl, whisk together 1/4 cup maple syrup, 2 tablespoons maple syrup, 1/4 cup light olive oil, 3/4 teaspoon coarse kosher salt, 1/2 teaspoon cinnamon, and 1/2 teaspoon vanilla extract.

Pour the wet mixture over the dry ingredients and fold until everything is coated.

Spread the mixture onto a baking sheet, pressing down for chunkier granola.

Bake for 1 hour and 15 minutes, stirring every 15 minutes.

After the first hour, add in 1/2 cup raisins and a few tablespoons of Craisins and bake for an additional 15 minutes.
