Granola

4 cups rolled oats
2 cups kamut flakes
1 cup nuts (1/2 cup walnuts, 1/2 cup coconut)
6 tablespoons light brown sugar
1/2 cup dry non-fat milk powder
1/2 cup wheat germ
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
2/3 cup maple syrup
2/3 cup canola oil
1 tablespoon vanilla
1/2 to 3/4 cup chopped dried fruit (optional)

Preheat the oven to 325 degrees Fahrenheit.

Toast 4 cups of rolled oats and 2 cups of kamut flakes on a sheet tray for 10 minutes.

In a bowl, mix together 1 cup of nuts (1/2 cup walnuts and 1/2 cup coconut), 6 tablespoons of light brown sugar, 1/2 cup of dry non-fat milk powder, 1/2 cup of wheat germ, 1 1/2 teaspoons of salt, and 1 1/2 teaspoons of cinnamon.

Add the toasted grains to the dry ingredients and mix well.

In a pot, heat 2/3 cup of maple syrup, 2/3 cup of canola oil, and 1 tablespoon of vanilla until warm.

Pour the warm liquid mixture over the dry ingredients and mix until well coated.

Spread the mixture evenly on a 13 by 18 inch tray and bake at 325 degrees for 10 minutes.

Stir the granola and bake for another 10 minutes.

If desired, add 1/2 to 3/4 cup of chopped dried fruit, mix in, and let cool completely before storing.
