2 cups rolled oats
1 cup nuts (almonds, walnuts, or pecans)
1/2 cup honey or maple syrup
1/4 cup vegetable oil or melted coconut oil
1/2 tsp salt
1 tsp vanilla extract
1/2 cup dried fruits (raisins, cranberries, or apricots)
1/2 tsp cinnamon (optional)

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the rolled oats, nuts, salt, and cinnamon (if using).

In a separate bowl, mix together the honey (or maple syrup) and vegetable oil (or melted coconut oil) along with the vanilla extract.

Pour the wet mixture over the dry ingredients and stir until everything is well coated.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even browning.

Remove from the oven and let it cool completely on the baking sheet.

Once cooled, mix in the dried fruits.
