2 cups rolled oats
2/3 cup chopped nuts (walnuts and almonds)
1/3 cup dried chopped fruit (dried apricots and dried cranberries)
1 tablespoon coconut oil
1/2 teaspoon cinnamon
a pinch of sea salt
3 tablespoons maple syrup
1/3 cup unsweetened shredded coconut

Measure out 2 cups of rolled oats.

Chop 2/3 cup of nuts (using walnuts and almonds).

Chop 1/3 cup of dried fruit (using dried apricots and dried cranberries).

Heat a large sauté pan over medium-low heat.

Add 1 tablespoon of coconut oil to the pan and let it melt.

Once melted, add the rolled oats and chopped nuts to the pan.

Add a pinch of sea salt and 3 tablespoons of maple syrup to the mixture.

Add a fat pinch of cinnamon to the pan.

Gently toss all ingredients together until well incorporated.

Toast the mixture on the stove for 8 to 10 minutes, stirring every 30 to 60 seconds.

Watch for the oats and nuts to become lightly golden brown and fragrant.

Once golden brown and toasty, turn off the heat.

Stir in the chopped dried fruit and 1/3 cup of unsweetened shredded coconut.

Let the granola cool completely before storing.
