  • 2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup chopped dates
  • 1/2 cup almonds, chopped
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large mixing bowl, combine the rolled oats, shredded coconut, chopped dates, and chopped almonds.
  3. 3In a separate bowl, mix together the honey (or maple syrup), melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
  4. 4Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. 5Spread the mixture evenly onto a baking sheet lined with parchment paper.
  6. 6Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown.
  7. 7Remove from the oven and let it cool completely on the baking sheet.
  8. 8Once cooled, break the granola into clusters and store in an airtight container.
