  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, dried fruit, cinnamon, and salt.
  3. 3In a small saucepan, melt the coconut oil and maple syrup together over low heat. Stir in the vanilla extract once melted.
  4. 4Pour the melted mixture over the dry ingredients and mix well until everything is evenly coated.
  5. 5Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. 6Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown.

  5. 5Form the mixture into sausage shapes, about 4 inches long.
  6. 6Heat olive oil in a skillet over medium heat.
  7. 7Add the oat sausages to the skillet and cook for about 5-7 minutes on each side, or until golden brown.
