Couscous Salad with Pomegranate

Fluff the couscous with a fork after 10 minutes and set aside.
In a bowl, combine the couscous with diced cucumbers, pomegranate arils, cherry tomatoes, sliced red onion, sliced olives, and finely chopped mint and parsley.
In a separate bowl, whisk together extra virgin olive oil, freshly squeezed lemon juice, black pepper, and salt to taste for the dressing.
Before serving, mix the dressing into the salad and add roasted, roughly chopped pistachios, reserving some for garnish.
