1

Start by listing the ingredients: chopped tomatoes, 5 eggs, chopped onion, canned sardine, vegetable oil, curry leaves, scotch bonnet pepper, blended garlic, blended ginger, salt, thyme, seasoning cube, fish spice, and water.

2

Heat up a frying pan and add vegetable oil, allowing it to heat.

3

Add chopped onions to the pan and sauté for about 2-3 minutes to release flavor into the oil.

4

Add grated ginger and garlic to the onions and sauté for another 2-3 minutes.

5

Add chopped tomatoes to the pan and mix well to combine.

6

Fry the mixture until the oil begins to float on top of the tomatoes.

7

Add seasoning cube, thyme, and fish spice to the pan, followed by a little salt, and stir well.

8

Allow the mixture to fry for about 5 minutes.

9

Add the canned sardine to the mixture and mash it well before stirring it into the pot.

10

Optionally, add a little water to the mixture and stir, allowing it to come to a boil.

11

In a separate bowl, add salt to the eggs and whisk until well combined.

12

Pour the whisked eggs into the pot and stir gently to mix with the sauce.

13

Cover the pot and allow it to cook on low to medium heat for about 5 minutes.

14

After 5 minutes, stir the mixture to combine and check the consistency.

15

Add curry leaves to the mixture and stir properly to incorporate.
