2 Tbsp raw papaya
2 cinnamon sticks
10 to 12 black peppercorns
3 black cardamom
1.5 tsp cumin seeds
7 to 8 cloves

1 tsp homemade tandoori masala powder
1 Tbsp homemade tikka masala powder
1 Tbsp homemade garam masala powder
1 tsp crushed red chili
3 large grind tomatoes
1 cup yogurt
3/4 cup oil
1 Tbsp dry fenugreek leaves
2 inch ginger
2 bullet green chilies
2 tsp fried gram flour

Mix 1 kg beef mince with 2 Tbsp raw papaya and let it marinate for 1 to 1.5 hours.

Add 2 cinnamon sticks, 10 to 12 black peppercorns, 3 black cardamom, 1.5 tsp cumin seeds, 7 to 8 cloves, ginger & garlic paste, 1.5 Tbsp heaped fried onion, 1 large salt, 1 tsp homemade tandoori masala powder, 1 Tbsp homemade tikka masala powder, 1 Tbsp homemade garam masala powder, and 1 tsp crushed red chili to the marinated mince and mix well.

Add 3 large grind tomatoes and 1 cup yogurt to the mixture and mix well again.

Heat 3/4 cup oil in a pan and add the marinated mince, cooking on high flame until the mince releases its own water.

Cover and cook on low to medium flame until the water dries and oil comes to the surface, about 20 minutes.

Add 1 Tbsp dry fenugreek leaves and mix well.

Heat coal and place it on the cooked mince, adding oil to the coal and covering it until the smoke settles.

Add 2 tsp fried gram flour and cook on high flame for 5 to 8 minutes, mixing in slices of 2-inch ginger and 2 bullet green chilies, reserving 1 green chili for garnishing.

Serve with hot parathas, naan, or tandoori roti, along with salad and sweet lassi.
