Rough chop 1/3 head of cilantro and place in blender.
Slice 2 limes in half and juice them into the blender.
Add 1 avocado to the blender after removing the skin and pit.
Add sour cream and mayonnaise to the blender.
Blend the mixture until smooth and taste for seasoning.
Chop jalapenos and add to the blender along with smoked garlic.
In a bowl, combine 1.5 pounds of 80/20 ground beef with the blended mixture.
Gently fold the mixture into the beef without overworking it.
Form the beef mixture into balls, roughly 2.5 to 3 ounces each.
Preheat a flat top griddle and toast buns with softened butter.
Season the beef balls on one side before placing them on the griddle.
Smash the beef balls on the griddle to form patties.
Cook the patties until browned and cooked through, about 3-4 minutes per side.
