Mix ground beef and chorizo together in a bowl.
Prepare onions and jalapeños for cooking.
Heat the Blackstone grill for about 5-10 minutes, with one side on high and the other on low.
Add avocado oil to the hot side of the grill.
Place onions on the grill and stir them around.
Add jalapeños to the grill with the onions and stir.
Season the mixture with salt, pepper, and garlic powder.
Cook the onions and jalapeños until they are softened and have a good char, stirring every minute or two.
Move the cooked onions and jalapeños to the cooler side of the grill.
Toast the Hawaiian buns on the grill with a little mayonnaise until golden and crispy.
Once the grill is screaming hot, add oil and place the burger patties down.
Press down on the patties with parchment paper for about 5-10 seconds to get a good crust.
Flip the patties once they are crispy and add gouda cheese on top to melt.
Prepare chipotle mayonnaise by mixing mayonnaise with adobo sauce.
Spread chipotle mayonnaise on the top and bottom of each toasted bun.
Place a layer of pico de gallo on the bottom bun.
Add a double patty on top of the pico de gallo.
Top the burger with the cooked onions and jalapeños.
Add tortilla strips for crunch on top of the burger.
Finish by placing the top bun on the burger and serve.
