Tamarind Date Chutney

1 cup chopped dates
1 cup grated jaggery
300 ml water
0.5 teaspoon Kashmiri red chili powder

1 bay leaf
1 red dried chili
mustard seeds
fenugreek seeds
cumin seeds
nigella seeds
fennel seeds
carom seeds
ginger paste

Soak tamarind pulp in warm water for 30 minutes.

Add the soaked tamarind pulp to a pan.

Add 1 cup of chopped dates and 1 cup of grated jaggery to the pan.

Mix everything together and stir until completely mixed, which takes about a minute.

Add 300 ml of water to the pan and mix again.

Cover the pan and let it cook for 4 to 5 minutes.

After 5 minutes, remove the lid and add 0.5 teaspoon of Kashmiri red chili powder, salt, and black salt.

Mix everything together and keep stirring, then cover and let it cook for another 2 minutes.

In another pan, heat 1 tablespoon of oil for tempering.

Add 1 bay leaf, 1 red dried chili, mustard seeds, fenugreek seeds, cumin seeds, nigella seeds, fennel seeds, carom seeds, and ginger paste to the oil.

Mix the tempering ingredients together and cook for about 40 seconds.

Turn off the stove and add the tamarind date mixture to the tempering, mixing well.

Cook the combined mixture for about 2 minutes.

Get a bowl and a strainer, and strain the prepared chutney by pressing it through the strainer.
