Heat 1 tbsp oil in a pan over medium-high heat.
Add the chopped onions (about 1 onion) and sauté until soft, stirring constantly.
Add the diced smoked ham (about 5 slices) and cook for 5 minutes or until lightly browned; transfer to a bowl and set aside.
In a saucepan, melt 35g of butter over medium heat.
Stir in 40g of flour until the mixture clumps together.
Slowly pour in 250ml of milk while stirring or whisking thoroughly until the milk is incorporated and the sauce is thick and smooth.
Stir in the sautéed onion and smoked ham, then add grated quick melt cheese and mix well, cooking until there is no standing liquid.
Season with salt, pepper, and nutmeg, adjusting seasoning as necessary.
Turn off the heat and transfer the mixture to a bowl; let it cool completely at room temperature.
Once cooled, roll the mixture into little balls, each about 17g, covering a cheese block if needed.
Cover with plastic wrap and store in the fridge for about two hours.
Prepare 3 small shallow bowls: one with flour, one with bread crumbs, and one with beaten eggs.
Roll the balls in flour, then dip in eggs, and finally roll in breadcrumbs; dip each breaded ball again in the eggs and roll for a second time in the breadcrumbs.
Place on a cutting board or baking sheet.
Fry 8 meatballs in hot oil until golden brown and crispy, draining on a wire rack.
