Roll out the pie crust using flour to prevent sticking to a thickness of about an eighth of an inch.
Cut out 12 circles from the rolled pie crust, about a half inch to an inch bigger than the muffin tin openings.
Transfer the pie crust circles into a muffin tin that has been lightly sprayed with non-stick oil, pressing them up the sides.
Chill the pie crust in the fridge while preparing the filling.
In a saucepan, simmer 2 cups of apple juice until reduced to about 3 or 4 tablespoons.
In a mixing bowl, combine brown sugar and the reduced apple syrup.
Add melted butter, one large egg, vanilla extract, a small pinch of salt, and a small splash of heavy cream to the bowl and whisk until smooth.
Divide about a half cup of chopped walnuts among the bottom of the tart shells.
Pour the filling into the tart shells, filling them about two-thirds full.
Bake in a 375°F oven for about 20 minutes until the crust is cooked through and the filling is bubbling.
Let the tarts cool for about 5 minutes before checking for any sticking crust and then cool for another 10 minutes before transferring to a rack.
