Preheat the oven to 200°C (392°F).
Peel and chop 4 potatoes into pieces about the size of a finger.
Drizzle a little olive oil in the bottom of a baking dish and layer the chopped potatoes evenly.
Add 100ml of water (about half a cup) to the dish.
Squeeze the juice of 1 lemon over the potatoes and drizzle more olive oil on top.
Bake the potatoes in the oven for 20 minutes.
While the potatoes are baking, clean the sardines by cutting off the tails and heads, then opening them up to remove the spine and guts.
Place the cleaned sardines in a bowl and season with 1 teaspoon of salt and the juice of half a lemon for marinating.
In another bowl, mix 50ml of olive oil, the juice of another lemon, 2 minced garlic cloves, a pinch of black pepper, and some chopped parsley to create a marinade.
After 20 minutes, remove the potatoes from the oven and add sliced onions (1 medium onion) on top of the potatoes.
Layer the sardines over the potatoes and pour the marinade over everything.
Return the dish to the oven and bake for an additional 45 minutes at 200°C (392°F).
Check for doneness; the sardines and potatoes should be well cooked and tender.
