2 tablespoons melted unsalted butter
1/4 stick unsalted butter
1 cup whole milk
1/4 cup shredded provolone cheese
1/4 cup freshly grated mozzarella cheese
1/4 cup freshly grated Parmesan cheese
1/4 cup freshly grated white cheddar cheese
2 dashes ground white pepper
a pinch of kosher salt
1-2 cranks cracked black pepper

Using a paper towel, dust 13 very large white button mushrooms free from any visible dirt.

Using a small spoon or grapefruit knife, gently core out the center of each mushroom to create a deeper well for stuffing.

Place the cored mushrooms top down in an appropriate casserole dish.

In a large mixing bowl, combine 8 oz of Philadelphia whipped cream cheese, 1/2 cup of freshly grated Parmesan cheese, and 1/2 cup of freshly grated white cheddar cheese.

Add 2 finely minced garlic cloves and 1 teaspoon of Hidden Valley ranch seasoning to the cheese mixture.

Tamp the cheese mixture into each mushroom cavity, being careful not to overstuff them.

In a separate bowl, mix together 1/2 cup of Panko breadcrumbs, 1/2 cup of freshly grated Parmesan cheese, 1 tablespoon of minced fresh Italian parsley, 1 teaspoon of garlic salt, and 2 tablespoons of melted unsalted butter until the breadcrumbs are coated.

Top each stuffed mushroom with a bit of the breadcrumb mixture.

Place the stuffed mushrooms on the center rack in a preheated 375°F oven for about 20 minutes.

In a small saucepan over medium heat, melt 1/4 stick of unsalted butter.

Add 1 cup of whole milk, 1/4 cup of shredded provolone cheese, 1/4 cup of freshly grated mozzarella cheese, 1/4 cup of freshly grated Parmesan cheese, and 1/4 cup of freshly grated white cheddar cheese to the saucepan.

Season the cheese sauce with 2 dashes of ground white pepper, a pinch of kosher salt, and 1-2 cranks of cracked black pepper.

Allow the cheese sauce to simmer on low heat until all the cheese is melted and the sauce begins to thicken.

Pour the four cheese sauce in between the stuffed mushrooms.
