Blue Cheese Stuffed Mushrooms

4 oz blue cheese, crumbled
1/4 cup cream cheese, softened
1/4 cup breadcrumbs
2 tbsp fresh parsley, chopped
1 clove garlic, minced
1/2 tsp black pepper
1/4 tsp salt
1 tbsp olive oil

Preheat the oven to 375°F (190°C).

Clean the mushrooms and remove the stems, setting the caps aside.

In a mixing bowl, combine the blue cheese, cream cheese, breadcrumbs, parsley, garlic, black pepper, and salt. Mix until well combined.

Stuff each mushroom cap with the cheese mixture, pressing down gently to pack it in.

Place the stuffed mushrooms on a baking sheet and drizzle with olive oil.
