4 tart green apples
1/2 cup white sugar
1/2 cup white distilled vinegar
1/2 cup dried apricots
1/4 cup golden raisins
4-5 slices fresh ginger
1 shallot
1 teaspoon hot pepper flakes
1 star anise
1 teaspoon mustard seeds
1 teaspoon kosher salt

Mix together 1/2 cup white sugar and 1/2 cup white distilled vinegar in a bowl and set aside.

Peel 4 tart green apples, cut them into quarters, and remove the core.

Cut each quarter into 2-inch pieces and toss them into the pan to prevent browning.

Dice up 1/2 cup dried apricots and add to the apples in the pan.

Add 1/4 cup golden raisins to the pan with the apples and apricots.

Add 4-5 slices of fresh peeled ginger to the pan.

Add 1 shallot, diced, to the mixture in the pan.

Sprinkle in 1 teaspoon of hot pepper flakes, and add 1 star anise to the mixture.

Put the pan on medium-high heat and bring the mixture to a simmer, stirring occasionally.

Add 1 teaspoon of mustard seeds and 1 teaspoon of kosher salt to the pan and stir.

Add 2 cloves of minced garlic to the mixture and stir well.

Reduce heat to medium-low and let the mixture simmer for 40 to 45 minutes, stirring occasionally.

After 40 to 45 minutes, check the consistency; it should be thickened and the fruit softened but still chunky.

Remove the pan from heat and let the chutney cool to room temperature.

Refrigerate the chutney until needed, noting it will thicken further as it cools.

Before serving, remove the ginger slices and star anise from the chutney.
