Measure 3 cups of buttermilk. If you don't have buttermilk, measure 3 cups of whole milk and add 3 tablespoons of vinegar, stir, and set aside.

In a big bowl, measure out 6 cups of rolled oats, 1 tablespoon of cinnamon powder, and 250 g of melted butter. Pour in the buttermilk and stir everything together.

Add 1 cup of packed brown sugar to the mixture. You can also use honey or maple syrup instead. Mix until well combined, cover the bowl, and refrigerate overnight.

The next day, peel and grate 6 large apples. Retrieve the mixture from the fridge and add the grated apples. If the bowl is too small, transfer to a bigger bowl.

Stir the mixture to loosen it up, then add 4 large eggs and 1 tablespoon of baking powder. Mix until the eggs are fully incorporated.

Add about 2 to 3 cups of frozen raspberries or any fruit you like, but keep the apples for moisture. Mix in the fruit.

Line a baking tray with baking paper and spray the bottom so the paper sticks. Pile the mixture into the tin, pressing down firmly.

Place the tray in a preheated oven at 180°C (350°F fan forced) and bake for 60 to 75 minutes or until the top is golden brown and springs back when pressed gently.

Let the oatmeal cool down thoroughly in the tin, or slice while warm if in a hurry. Serve with Greek yogurt and maple syrup, and a berry coulis if desired.

To make the berry coulis, place some frozen fruit in a small saucepan, add icing sugar to taste, and heat over low heat. Bring to a boil and let it simmer for a few minutes.
