Bake for 1 hour, then turn off the oven and let the pavlova cool completely inside.
Whip heavy cream with vanilla extract and powdered sugar until soft peaks form.
Once cooled, carefully transfer the pavlova to a serving platter.
Spread whipped cream over the pavlova, filling the center well.
Top with cherries and chocolate shavings.
Dust with cocoa powder before serving.
