Whole Chicken- 1 (4 lbs)
Lime Juice - 1/4 cup
Pimento- 1 cup (finely chopped)
Garlic- 1/2 cup (finely chopped)
Onion- 1 1/2 cups (finely chopped)
Chive- 1 cup (chopped) + 1/4 cup
Chadon beni-1 1/2 cups (chopped) + 1/4 cup
Fine Thyme - 5 sprigs
Spanish Thyme - 3 leaves
Scotch Bonnet Pepper- 2 tbsp + 1 whole
Black Pepper - 1 tsp
Salt- to taste
Coconut Oil - 1/2 cup
Brown Sugar- 1 cup
Roucou - 2 tbsp
Smoked Pork Bones - 1 lb
Rice- 1 1/2 lb
Pigeon Peas- 2 tins (410g)
Carrots- 3 (cubed)
Pumpkin- 1 lb (cubed)
Fresh Coconut Milk- 2 cups

Cut up Chicken into bite size pieces.

Place in a bowl, submerge in water & add lime juice. Allow Chicken to soak in lime mixture for 5 minutes before rinsing in clean water.

Drain off excess water and set aside.

Roughly chop Pimento, Garlic, Onion, 1 cup of Chive, 1 1/2 cups of Chadon Beni, Fine Thyme, Spanish Thyme & 2 tbsp of Hot Pepper.

Place into Mortar and Pessle or Food Processor and grind into a thick paste. (Feel free to add 1/4 cup oil to the mixture).

Add Seasoning, Black Pepper & Salt to Chicken. Allow to marinate for 6 to 8 hours or overnight in the refrigerator.

Heat iron pot over high heat. Once iron pot is hot, add Oil.

Once Oil is heated, add Brown Sugar. Once sugar begins to dissolve, stir constantly to prevent it from burning and turning bitter in taste.

Place Chicken in pot, cover and let brown for 10 minutes (chicken should be at room temperature).

Reduce heat to medium. Add Roucou and Smoked Bones. Stir, cover and allow Chicken to absorb the Brown Sugar and Roucou (about 5 to 10 minutes).

Add Rice and mix until Rice turns brown in color. Add remaining ingredients ensuring to stir until everything is fully incorporated.

Cover and let cook for 15 minutes (At this point you can check the doneness of the rice. Depending on how hard or soft it is you can either add more water if it's still very hard OR leave the pot uncovered until the rest of the water evaporates).

Check Rice for desired doneness and taste for salt. If Rice is fully cooked but the mixture still looks a bit too wet, leave pot uncovered, reduce heat to low and keep stirring so the bottom doesn't burn. Do this until you've reached your desired consistency.
