1

Press tofu between two plates with books on top to remove excess moisture.

2

Chop the vegetables (red peppers, green peppers, yellow squash, onions) into pieces for skewering.

3

In a mixing bowl, whisk together 1 to 2 tablespoons of Korean denjang paste, 1/4 cup of soy sauce, 1/2 teaspoon of freshly grated ginger, 1/2 cup of vegetable oil, and 1/2 teaspoon of sugar or maple syrup.

4

Crush one clove of garlic and add it to the marinade mixture.

5

Optionally, add a dash or two of toasted sesame oil, a dash of red chili paste, and a small handful of chopped scallions to the marinade.

6

Cut the block of tofu down the middle and then into hunks that can easily be skewered.

7

Place the tofu in a bowl and pour the marinade over it, gently tossing to coat.

8

Let the tofu marinate for about 10 minutes, tossing it again after that time.

9

Combine the marinated tofu with the chopped vegetables and gently toss to coat everything in the marinade.

10

Let the mixture sit for another 10 to 20 minutes to absorb the marinade.

11

Preheat the grill to about 450ยฐF.

12

Alternate threading the marinated tofu and vegetables onto skewers.

13

Brush the skewers with extra marinade to prevent sticking while grilling.

14

Place the skewers on the grill and turn them frequently to avoid sticking, brushing with extra marinade as needed.

15

Cook the skewers with the grill closed for about 20 to 25 minutes, watching carefully for sticking and turning as necessary.
