Instructions

  1. 1In a large bowl, combine the sourdough discard, milk, egg, melted butter, and vanilla extract. Mix until well combined.
  2. 2In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. 3Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
  4. 4Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. 5Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. 6Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  7. 7Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.

Instructions

  4. 4Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
